The qualities of oysters vary drastically as you go from Bay to Bay, Province to Province, and Coast to Coast. Cascumpec Bay, nestled in the Northwestern end of Prince Edward Island, is a clean system rivers and bays where many oysters are grown. The abundance of salt water flow from the Gulf of St. Lawrence and the earthy influence of peat moss is apparent and gives our oysters a unique flavour and look.
